Winemaking Method: Vacuum distillation and dealcoholization
Background: Vacuum distillation refers to a dealcoholization technology performed under low pressure (vacuum). Under such conditions, the boiling point will be lowered, the liquid will be separated at low temperatures, and the impact of high temperatures on the flavor of the wine will be avoided. Some volatile components of the wine (such as flavor compounds) are still lost during the first distillation, but these can be partially recovered in the second, smaller distillation, with the recovered aroma components immediately returned to the dealcoholized fraction.
Tasting Notes:Classic Riesling, the delicate floral aroma is perfectly blended with the rich aroma of citrus, green apple and peach. The entrance is fragrant and full of energy, and the comfortable acidity perfectly balances the residual sugar feeling of dealcoholization.
